FATS: WHICH DO YOU NEED? PART 1

Body Perfect 101: Do you know eating sugar is also associated with hypoglycemia (low blood sugar)? When you consume sugar, the beta cells of the pancreas secrete the hormone insulin. Insulin lowers blood sugar levels and is necessary for body to use glucose, which is used to produce energy. You need to limit your consumption of saturated and polyunsaturated fats. Saturated fat is found mostly in animal fats. It is solid at room temperature and significantly raises the LDL or bad cholesterol. Poly unsaturated fats are found in products such as mayonnaise, salad dressings, heat processed safflower oil, sunflower oil, and corn oil.

Trans-Fats (hydrogenated and partially hydrogenated fats):- During hydrogenation, the cheapest oils are mixed with a metal catalyst. The oil is then subjected to hydrogen gas in a high-pressure, high-temperature reactor to force hydrogen through it until it has saturated.

Emulsifiers are then added, and the oil is deodorized at high temperatures and steam cleaned. Margarine is an example of a product containing hydrogenated oils. Margarine must be bleached to hide its Grey color and then dyed and flavored to resemble butter.

Adding hydrogen atoms to liquid fats and oil makes these oil stay in solid form at room temperature. This means that they are much less likely to become rancid and their shelf life is greatly prolonged.

This process, however, alters the chemical structure of the fat to an unnatural “trans fatty acid”, which becomes an enemy of the heart by raising LDL (bad) cholesterol levels and lowering HDL (good) cholesterol levels. Trans-fats have been found to be more harmful to your arteries than saturated fat, and they are implicated in heart disease and cancer.

These bad fats are found in almost every item in the supermarket – pastries, rolls, breakfast cereals, crackers, and processed or packaged foods. Bad fats are also found in the bakery section in doughnuts, cookies, cakes, pies and other items that entice you as you walk around the supermarket. Try to avoid these.
