SWEET potato season is here. Potato is available everywhere and cheap. This week, Kitchen Africa brings to you sweet potato recipe you can’t resist.

•Egg coated potato fries

The Western world is known for packaging foods with names that arouse your curiosity until you find that they are the meals you eat every day. The same fried yam coated with egg you buy at your street junction is called Yamarita in the Western world.

But because of the packaging, a plate may be bought for N2, 500 while the same size at your junction may be sold for N200. As Homemakers, package your meals for exciting moments for your family. Packaging makes the difference.

As the name implies, sweet potato is very sweet and, according to information, it is an excellent source of calcium, vitamins A and C, potassium, fiber and beta-carotene. It is also low on the glycemic index, which means it helps to regulate blood sugar.

However, it is warned that the health benefits of the sweet potato can be squandered when they are not prepared correctly. Taking any healthful food and frying it in fat or oil significantly decreases the health benefits you may have received from the food in its natural form. Today’s recipe is not something you can eat every day except if baked or boiled.

Ingredients

3 medium sized sweet potatoes

2 eggs

3 tablespoonfuls plain flour

Seasoning cube

Vegetable oil for frying the potatoes

Ground pepper to taste

Salt to taste

RECIPE

STEP1: Wash the sweet potatoes thoroughly, peel off the skin and cut into thin slices.

STEP2: Rinse and place the  sweet potato slices in a pot; add enough water to cover it. Add salt to taste and parboil for 5 minutes. Pour out into a sieve and set them  aside, to cool a bit.

NOTE: The  sweet potatoes should be firm and not tender. Remember that you’ll be frying them later.

STEP 3: Break the eggs, add the ground pepper, crushed seasoning cube and salt to taste; wash the sweet potatoes thoroughly and set aside.

Pour the flour into the egg mixture, mix well to form a paste and set aside.

STEP 4:   Dip each of the cooled  sweet potato slices into the paste; turn them over  to evenly coat all sides.

STEP5: Heat up the vegetable oil until moderately hot and fry the coated  sweet potatoes on medium heat, until both sides are golden brown. There you are! You have a yummy, crispy egg- coated sweet potato fries. Do not just serve, package it well and enjoy with  omlette,  pepper sauce, obe ata  dindin or  any  sauce of your choice.
