What kind of food do you like?
I’m not a food person. I eat whatever food given to me by my wife. Sometimes, I don’t even know what I want to eat so she helps in making the choice for me all the time.
That means your wife has a better choice when it comes to food?
Yes, she knows what I like all the time. Sometimes, I have favourite but they don’t last. My favourite soup for a particular month divers from the other month so, it is difficult to say, I like a particular food. But, I eat the normal food everybody eats.
And if any of your members sees you eating amala…
I like experimenting cuisines that I don’t know. So, I could try amala. I don’t mind trying it for fun.
What food were you eating before your wife took over?
Beans was easy to cook. I eat beans every time since I have to cook by myself. I can cook beans very well until recently.
…And growing up
I ate everything in the village. But, I became a young man living on my own, it was only beans I could prepare so well. I have no problem with complicated food like cooking soup.
What is the favourite food of Akwa-Ibom people?
There are lots of beautiful dishes. One of them is Ataama. It is a dish everyone needs to taste. It is delicious and fantastic especially the one prepares with palm fruit, it is called, Abah Ataama. There is a certain way my people prepare melon soup too. It is called Efere-Npang. It is beautiful
Do you know how to prepare any of these delicacies?
My wife does but I don’t. I’m not too good in cooking but I also help her in the kitchen. But if I’m giving a chance to cook, I might burnt out the house.
What exercise do you engage in?
I used to play football. Right now, I jog and do some press ups. I don’t play football anymore.
I take water on a daily basis as well as malt. I don’t touch fruit juice. I try to watch my sugar content.
Away from your pastoral work, how do you relax?
I take sometime to rest. I rest on Mondays. I rest with my wife. I also gist and catch up with all the things, I’d missed. Read newspapers, magazines, catch up with movies if there was anytime at all. I rest with my family. I don’t know how to rest alone. I rest with my wife most times.
Soy products help enhance nutrition— Experts
As part of efforts to promote good health in the country, Soy products have been identified to help the down trodden in the society.
Speaking at a workshop on “Essential of Protein Nutrients organised All Tech Nutrient Limited in partnership with World Initiative for Soy in Human Health, WISHH which took place at Devcoms Networks, Mr. Chimezie Obialor, Business Development Manager, said the programme is organised to promote the use of soy and tell everyone how beneficial soy could be.
According to him, “A common man on the street can benefit from soy because of its health benefits. It can be use in baking bread. It can be use in the preparations of snacks, sausages. It protein content and quality is high. Compare to meat, the protein content of soy is high.
There is no heart risk associated to soy milk consumption unlike meat. It reduces one’s risk of contracting an heart related disease. Soy flour can also be use in beverages, fortify pap, mix with eba, amala, fufu, semovita for healthy consumption.
Also, Silas Okuh, said, soy beans has been discovered to reduce malnutrition. Its protein is derive from plant and animal. It contains all the essential and non- essential amino acid.
That is why it becomes a rich source of protein as regard to plant source. It is a good ingredient that helps in enhancing nutrition because it is rich in protein. It contains over 38 percent protein.
He further explains that soy flour is made from roasted soybeans into a fine powder. All soy flour gives a protein boost to recipes. Soy flour is gluten-free, so yeast raised breads made with soy flour have a more dense texture. It is best used for fortification of other flours including what, rice and corn.
Adding up yo 10 percent of soy flour can greatly increase the protein and nutritional content of bread, chapattis, tortilla and which are principal diet and at times the only staple that people get on the street. It is highly digestible source o amino acid and retains most of the beans’ dietary fiber.
A diabetic requires lots of soy protein. And it is doesn’t have side effect in terms of fertility problem. The cost of consuming soy bean protein is lesser compared to other nutrients. Continuous in-take of soy protein healthy.
Ekpang Nkukwo is one of the traditional delicacies of the Efiks and Ibibios. Made with coco-yam and little water-yam, this meal is relished by many and contains the basic classes of food, the flavour and taste are heavenly mouth-watering.
Cocoyam, peeled, washed and grated
Wateryam (optional), peeled, washed and grated
Fresh Cocoyam leaves,Spinach or Pumpkin leaves
Meat, Goatmeat,Snails or Fish (optional)
Meat-Stock, Hot Water, Dried Fish, Stockfish, slightly cooked, Crayfish, Prawns or shrimps, Chilli Pepper to taste, Seasoning, Salt to taste, Onion, Palm Oil, Shelled Periwinkle (optional), Scent leaf, chopped
•Cook the shelled periwinkle for about five minutes in salted water and wash properly
•Pour the periwinkle in the pot to form a base. Add one cup of palm oil .
•To the coco-yam and water-yam mixture, crush and sprinkle over 1 cube of maggi and about 1/2tsp of salt . Mix properly with your fingertips or with a wooden stick
•Use the leaves to make small wraps with the coco-yam and water-yam starting from one tip of the leaf to the other end .
Make wraps until all the mixture is finished. Boil about two cups of water. Put the ekpang on fire and add the 2 cups of water and steam for about five minutes.
Add the meat, dried fish and stock-fish. Add the crayfish, chilli pepper, onions, maggi cubes. Add the stock and allow to cook for about 15mins on medium heat.
Add the shrimps, remaining palm oil, scent leaf and salt to taste. Stir and slightly mash or just cut through with a knife. If it still isn’t properly cooked, add a little more water and allow to cook further on low heat. Serve in a flat plate
